| WHAT YOU'LL NEED |

medium onion, sliced |

cup (about 1 1/2 ounces) finely chopped pitted dried plums |

tablespoon Dijon mustard |

ounces Gruyére cheese, thinly sliced |

slices light rye bread |

Prep time: 10 minutes
Cook time: 25 minutes
In large nonstick skillet, melt butter over medium-high heat. Add onion; cook and stir 10 minutes or until golden brown in color. Add dried plums and continue to cook until heated through. Remove from heat; stir in mustard. To assemble sandwiches, layer 1/2 of onions and 2 ounces cheese evenly on two slices of bread; close with second slice of bread. Generously spray outside of both sandwiches with cooking spray. Heat large nonstick skillet over medium-high heat. Cover. Cook approximately 2 minutes on each side or until bread is light brown and cheese has melted.
