Cranberry-Dried Plum Relish
1 package (12 ounces) fresh cranberries
1 cup (about 6 ounces) pitted California Dried Plums
1 orange, peeled and quartered
1/2 cup pecans
1/2 cup sugar
  Sandwich
1/3 cup fat-free cream cheese, softened
1/2 teaspoon ground sage
8 slices pumpernickel bread
12 ounces thinly sliced skinless roasted turkey
4 lettuce leaves

Prep time: 15 minutes

In food processor, process cranberries, California Dried Plums, orange, pecans and sugar until finely chopped, pulsing on and off. (Makes 3 1/2 cups) In small bowl, mix together cream cheese and sage until blended. To assemble sandwiches, spread cream cheese mixture equally on four bread slices. On each slice, layer one-fourth of the turkey, 1/4 cup relish and one lettuce leaf; cover each with second bread slice. (Reserve remaining relish for later use, covered and stored in refrigerator for up to 1 week.)

Tips:
  • This refreshingly tangy relish also can be spooned over plain yogurt. Add a tablespoon of brandy and transform the relish into a dessert topping for vanilla ice cream or pound cake.
  • These sandwiches can be transformed into delicious hors d’oeuvres. Prepare relish and sage cream cheese as above. Spread cream cheese mixture on slices of party pumpernickel bread or 1/2-inch-thick baguette slices. Top each with some fully cooked turkey and relish. Garnish with parsley leaves, if desired.
